sabudana khichidi

Ingredients
🌿2 cups Sabudana before soaking
🌿2 cups water
🌿2 tablespoon oil
🌿1 teaspoon cumin seeds
🌿3-4 curry leaves*
🌿½ tablespoon grated ginger *
🌿2 green chillies finely chopped *
🌿2 medium sized 🌿potatoes peeled and cubed / 2 cups 
🌿½ cup roughly crushed roasted peanuts *
Salt to taste sendha namak for upvaas
2 teaspoon Sugar
1 tablespoon Lemon juice or to taste
Fistful of Chopped dhaniya 
🌿Few roasted peanuts for garnish

🌿Rinse sabudana under water until water turns clear. 

🌿Transfer the rinsed sabudana to a bowl and add 1 cup water to it.

🌿In the morning the sabudana would have soaked up all the water. But you still drain excess water.

🌿keep in fridge for 2 hr
🌿Heat oil in a pan on medium heat. add the cumin seeds 
🌿Then add the diced potatoes and cook for 3-4 minutes stirring often until potatoes are almost cooked. 
🌿Add Roasted peanut powder 
🌿Then add the green chili, curry leaves 
🌿Cook for few minutes until most of the sabudana pearls become translucent, stirring once or twice. Do not cook it for a long time else it will stick. Remove pan from heat. Add lemon juice 

🌿Serve sabudana khichdi hot with chilled yogur
